Rougaille - Rougaille is a classic dish of Mauritius, and its recipe has been passed down from generation to generation. It is essentially a tomato sauce that can be served with sausage, or another type of meat. The sauce is composed of onion, ginger paste, garlic, thyme, chillies, and cilantro (but varies between families) and can be served over rice. |
Creole Chicken Curry - Traditionally served with rice and lentils, Mauritian curries are very similar to Indian curries. You can find Creole chicken curry in most all of the restaurants or from street vendors in Mauritius. Recipes may vary with household/location, but the main ingredients include chicken, curry leaves, onion, potatoes, thyme leaves, and ginger paste.

Millionaire's Salad - Ths is a favorite Mauritian salad, made with salad leaves and a palm tree heart. The palm tree heart is taken from the inner core of certain palm trees, sliced thin, and eaten raw in the salad. Locals top the salad with a mix of seafood, including shrimp, oysters, crawfish, and crab. Lastly, the salad is dress with a light red sauce, called rouge.
